Aunt Hattie's* Egg Recipes
"Brindled" Eggs
Ingredients:
2 extra large eggs
4 tbsp chopped onion or leek
6 tbsp shredded mozzarella or cheddar cheese
5 tbsp Jalapeño Ranch dressing
1/2 tsp horseradish
dash garlic powder
dash black pepper
Mung or alfalfa bean sprouts
Shelled pumpkin seeds
In lightly oiled microwave-safe dish, beat together the eggs, onion,
Jalapeño dressing, horseradish, cheese, and spices. Microwave at
half power, covered, for approx. 5 - 6 minutes, stopping every couple of
minutes to stir. When eggs are firm, but not dried out, remove
from microwave and top with bean sprouts and pumpkin seeds.

Chocolate Scrambled Eggs
Ingredients:
2 eggs
2 tbsp Droste® (Dutch process) cocoa powder
1-2 tsp tahini sauce (to taste)
1-2 tsp light brown sugar (to taste)
Lightly oil cast iron* skillet. Break eggs into cold skillet. Add other
ingredients. Scramble with egg
whisk (preferable) or fork. Turn heat on low
setting. Keep scrambling the mixture whilst it is cooking. Be patient, it
will take 20 minutes or more until the eggs set (low heat and patience
are the secret of cooking eggs). Good for breakfast or dessert, as the
taste is similar to chocolate pudding.
Servings: 1
*Cast iron skillets heat more evenly than aluminum ones. You may use an
aluminum skillet if you have no other.
Huevos El Rancho
Ingredients:
2 eggs
4 tbsp. Ranch dressing
1/2 medium white onion, minced
Black pepper, to taste
In lightly oiled microwave-safe dish, thoroughly beat together
ingredients. Microwave at half power, covered, for approx. 5 - 6
minutes, stirring every couple of minutes. Serve hot.
Has a delicate, creamy flavor that goes well with buttered muffins or toast.

Oeufs Cordon Rouge
Ingredients:
2 eggs
3 - 4 tbsp. French dressing
1/2 medium onion, minced
black pepper, to taste
dash hot sauce, if desired
In lightly oiled microwave-safe dish, thoroughly beat together
ingredients. Microwave at half power, covered, for approx. 5 - 6
minutes, stirring every couple of minutes. Serve hot.
Has a chewy texture and delicate sweet-sour taste that goes well with
pancakes or a toasted muffin.

Zucchini Egg Scramble
Ingredients:
4 eggs
2 small zucchinis, in quarter-inch slices
3 - 4 oz. longhorn cheese, shredded
3/4 medium onion, sliced thick
4 tbsp Jalapeño Ranch dressing
1 pkg. NewMenu® TofuMate® Taco seasoning
1 tbsp. cooking oil (for frying)
black pepper, to taste
In a large frying pan, sauté the zucchini and onion slices under
medium-high heat, tossing frequently, until brown. Meanwhile, beat the
eggs, Ranch dressing, taco seasoning, and cheese together in a bowl. Lower
the heat in the frying pan and pour the mixture in the bowl slowly into
the frying pan. Continue cooking the combination in the frying pan, under
low heat, scrambling frequently with a wooden fork or spatula,
until the eggs are done. Serve immediately.

Thermonuclear Garlic Bread
This one got mixed in with Hattie's egg recipes. It's tasty and
delicious to be sure, but really, someone should talk to her about
organizing her recipe drawer.
Ingredients:
1 loaf Italian bread, sliced lengthwise
1/2 stick butter or margarine
2 - 3 large cloves fresh garlic, mashed or minced
Parmesan sprinkle cheese
Black pepper
1/8 cup chopped onion (optional)
2 oz. grated Romano cheese (optional)
Preheat oven to about 350° (not critical). Butter the two halves
of the bread loaf with a fairly thick layer. Spread the mashed or minced
garlic evenly over the buttered surface of the bread. Sprinkle liberally
with the Parmesan cheese. Add a dash of black pepper and/or other spices,
to taste. Optionally, top with chopped onion and Romano cheese. Place the
two halves of the bread together, face-to-face, and wrap the entire loaf
in aluminum foil. Place into oven and let bake for about half an hour.
Servings: 4

This is powerful stuff! Excessive consumption may lead to spontaneous
